Φιλέτο ψαριού με σως αυγολέμονο / Fish fillet on egg-lemon sauce


Ίσως είναι λίγο ασυνήθιστο να συνδυάζεται ένα φιλέτο ψαριού με σάλτσα αυγολέμονου. Πρόκειται όμως για μια συνταγή, που παλαιότερα ήταν περισσότερο διαδεδομένη. Τη δοκιμάσαμε και εκπλαγήκαμε από το αποτέλεσμα! Πρωτότυπη και πολύ νόστιμη συνταγή, που αφήνει μια άριστη επίγευση. Μπορεί να γίνει με οποιοδήποτε φιλέτο ψαριού με λευκό κρέας (γλώσσα, γαλέο, μπακαλιάρο, ξιφία). Εμείς χρησιμοποιήσαμε φιλέτο γλαύκου με άριστο αποτέλεσμα. Πάμε να τη φτιάξουμε!

Maybe it is a bit unusual to combine fish fillet with the Greek traditional egg-lemon sauce. However, it is a recipe that was more common in the past. We tried it and we were surprised by the amazing result! It's different, it's very tasty and leaves a great aftertaste. It can be cooked with any white meat fish (flatfish-common sole, cod, swordfish).We used a cod fillet with great results. Let's start cooking it!


ΥΛΙΚΑ (για 4 άτομα) / INGREDIENTS (serves 4)
- 750γρ φιλέτο ψαριού (γλαύκος) / 750gr fish fillets (cod, swordfish, flatfish)
- 4 μέτρια κρεμμύδια (500γρ), κομμένα σε ροδέλες / 4 medium-sized onions (500gr), cut into slices
- 2 σκελίδες σκόρδο, ψιλοκομμένες / 2 garlic cloves, finely chopped
- 1/4 ματσάκι μαϊντανού (20-30γρ), ψιλοκομμένo / 1/4 bunch parsley (20-30gr), finely chopped
- 1/4 ματσάκι άνηθος (20-30γρ), ψιλοκομμένo / 1/4 bunch dill (20-30gr), finely chopped
- 1 1/2 φλιτζ. ελαιόλαδο / 1 1/2 cup of olive oil
- 2 λεμόνια / 2 lemons
- 2 αυγά / 2 eggs
- αλάτι, πιπέρι / salt, pepper
- 1 φλιτζ. νερό / 1 cup of water

Προετοιμασία: Πλένουμε το ψάρι και το τοποθετούμε σε ένα ταψάκι ή μπωλ. Προσθέτουμε το χυμό του ενός λεμονιού, το μισό φλιτζάνι ελαιόλαδου, τη μία σκελίδα από το σκόρδο και αλάτι. Το σκεπάζουμε και το αφήνουμε για 1-2 ώρες στο ψυγείο.

Preparation: We wash the fillets and put them in a small pan or a bowl. We add the juice from one of the lemons, salt, one of the garlic cloves and half a cup of the olive oil. We cover with plastic wrap and leave it on the fridge for 1-2 hours.

ΕΚΤΕΛΕΣΗ / INSTRUCTIONS
Σε ένα βαθύ τηγάνι βάζουμε το υπόλοιπο ελαιόλαδο να ζεσταθεί σε μέτρια προς δυνατή φωτιά. Μόλις ζεσταθεί προσθέτουμε τα κρεμμύδια και τα τσιγαρίζουμε μέχρι να αρχίσουν να γίνονται ελαφρώς διάφανα. Προσθέτουμε το ψάρι (δεν το έχουμε ξεπλύνει από τη μαρινάδα), το νερό, το μαϊντανό, τον άνηθο και το υπόλοιπο σκόρδο. Αλατοπιπερώνουμε και ανακατεύουμε προσεκτικά για να μη διαλύσουμε το ψάρι. Χαμηλώνουμε τη φωτιά στο μέτριο και μαγειρεύουμε το ψάρι μέχρι να μείνει με λίγο από το ζουμί του και το λάδι. Κατά διαστήματα γυρνάμε προσεκτικά τα υλικά μας ώστε να μαγειρευτούν ομοιόμορφα.
Αποσύρουμε από τη φωτιά και ετοιμάζουμε το αυγολέμονο:
Σε ένα μπωλ χτυπάμε τα 2 αυγά και ρίχνουμε λίγο λίγο το χυμό από το δεύτερο λεμόνι ενώ τα χτυπάμε. Με ένα κουτάλι (της σούπας), προσθέτουμε σιγά σιγά ζουμί από το ψάρι, χτυπώντας συνέχεια τα αυγά, μέχρι η θερμοκρασία του αυγολέμονου να πλησιάσει αυτή του ψαριού. Θα προσθέσετε σχεδόν όλο το ζουμί που θα έχει μείνει.
Προσθέτουμε το αυγολέμονο στο ψάρι και ανακατεύουμε, κουνώντας ελαφρά το σκεύος, ώστε να πάει παντού.
Σερβίρουμε με τη συνοδεία τηγανητής πατάτας. Καλή όρεξη!

In a deep frying pan we put the rest of the olive oil and put it on medium to high heat. Once the oil is hot, we add the onions and saute until they start becoming translucent. At this point we add the fish fillets (without the juices from the bowl where it was marinated), the water, the parsley, the dill and the rest of the garlic. We add salt, pepper and stir carefully to avoid breaking the fillets into tiny bits. We lower the heat to medium and cook the fish until it remains with a little broth (about 1-2cm height). We remove the pan from the heat and start making the egg-lemon sauce:
We beat the eggs in a bowl and slowly add the juice of the second lemon.
Using a small ladle -or even a tablespoon- we take some of the fish broth and oil and start adding it to our egg-lemon mix, while whisking continuously. Add the broth slowly, as the purpose is to increase the temperature of the egg-lemon mix close to the level of the fish's temperature. We will need almost all of the broth and oil from the fish to achieve that. The result has to be a hot yellowish sauce.
Once the egg-lemon sauce is ready we pour it in the fish, we hold the pan and swing it lightly in a circular manner for a few seconds. 
Serve with french fries. Kali oreksi!

Tips:
1. Αποφύγετε τη χρήση ψαριού με πιο κοκκινωπό κρέας, όπως π.χ. τόνο, σολωμό. Η συνταγή αυτή είναι ιδανική για ψάρια με λευκό κρέας.
2. Για πιο αφράτη σως αυγολέμονο, μπορείτε να χτυπήσετε χώρια τα ασπράδια σε μαρέγκα, να την ενσωματώσετε στους χτυπημένους κρόκους, και μετά να προσθέσετε το λεμόνι και το ζουμί από το ψάρι.

1. Avoid using any fish with reddish meat, like tuna or salmon. This recipe is ideal for fish with white meat.
2. For a thicker and fluffier egg-lemon sauce, we can beat the egg-whites into foam, separately from the yolks. Then we incorporate the foam into the beaten yolks and then we start adding the lemon and the broth.

My mother used to make fish like during my childhood and it was really good. Thank for reminding me. YUM!

It's a great way to make fish. They used to cook like this in Greece until the early 80s when many traditional recipes were gradually forgotten and fast food/fast cooking dominated the landscape.

Hi Lin,
DO try it, it's an amazing dish!
The only thing that requires a bit more of your attention -but isn't difficult- is the Greek egg-lemon sauce if you 're making it for the first time:
You have to be patient whisking the egg and lemon while adding slowly the broth/liquids from the food, increasing its temperature. Then you just pour it into the food and shake the pot/pan. Never stir.
